Moist, cake-like, tasty muffins with minimal ingredients!

Ingredients
  • 1 banana
  • ⅓ c. milk
  • 1 egg
  • 1 c. quinoa flour
  • stevia (to taste; I use 6 scoops)
Instructions
  1. Pre-heat oven to 375 degrees Fahrenheit.
  2. Put the banana, egg, and milk in a blender and process until smooth.
  3. Pour the liquid into a bowl and add the quinoa flour and stevia (if using).
  4. Mix just until combined.
  5. Spoon into muffin pan.
  6. Bake for 18-20 minutes.
  7. Remove from oven; let cool.
  8. Enjoy your healthy, tasty treat!
